Sweet Summer Mikan cake

I cooked a cake by using sweet summer mikan (orange).
it is unexpectedly-soft and spongy,,,
so delicious ♥

- sweet summer mikan 1.5
(orange, lemon, banana, berry...
your choice of furuit )
- sugar  25g & 15g
- egg  3 (separated)
- flour  80g
- salad oil 45cc
- milk(water) 45cc

Dough
1. make the fruit juice with pulp.
2. simmer it until slightly reduced.*
3. mix the yolk and sugar(25g) until turned whitish.
4. add salad oil, milk, flour and *.
Meringue
5. beat egg whites w/sugar(15g) to stiff-peak stage.
6. give dough & meringue a gentle stir

Bake in an oven at 170°C for 40 minutes!
